Gursan

Ingredients
  • 500 g boned lamb meat 
  • 3 carrots 
  • 4 ground tomatoes 
  • 1 eggplant 
  • 1 tbsp garlic paste 
  • 2 dried lemons 
  • 3 zucchini 
  • 1 small potato 
  • 200 g pumpkin 
  • 100 g green beans 
  • 2 tbsp tomato paste 
  • 2 chopped onions 
  • 1 red chili 
  • 1 tbsp Saudi spices 
  • 1 tbsp coriander powder 
  • 1 tbsp cumin powder 
  • ½ tsp turmeric 
  • 1 tbsp salt 
  • 1 tbsp honey 
  • Dried Gursan bread 
Instructions
  1. Prepare the Vegetables:
    • Cut the eggplant, zucchini, potato, pumpkin, and carrots into large chunks. 
  2. Cook the Onions and Garlic:
    • Heat 4 tbsp of oil in a pot over medium-high heat on your LG cooktop.
    • Add the chopped onions and garlic paste, and cook until golden brown. 
  3. Add the Meat and Spices:
    • Add the lamb meat to the pot and cook for 5 minutes.
    • Add cumin, coriander, tomato paste, turmeric, Saudi spices, and mix well. 
  4. Add Ground Tomatoes:
    • Add the ground tomatoes and cook for 10 minutes, stirring occasionally. 
  5. Add Water and Cook the Meat:
    • Pour 2 liters of water into the pot, cover, and cook the meat for 35 minutes until tender. 
  6. Add Vegetables:
    • Add the red chili, dried lemon, green beans, and carrots to the pot, cooking for 5 minutes.
    • Add the eggplant, zucchini, potato, and pumpkin, and cook for an additional 10 minutes. 
  7. Prepare the Gursan Bread Layers:
    • In a deep serving bowl, layer small chunks of Gursan bread with sauce and vegetables. Repeat the layers until the dish is full. 
  8. Garnish:
    • Top with cooked meat and garnish with fried onions and freshly chopped coriander.
