Gursan
Ingredients
500 g boned lamb meat
3 carrots
4 ground tomatoes
1 eggplant
1 tbsp garlic paste
2 dried lemons
3 zucchini
1 small potato
200 g pumpkin
100 g green beans
2 tbsp tomato paste
2 chopped onions
1 red chili
1 tbsp Saudi spices
1 tbsp coriander powder
1 tbsp cumin powder
½ tsp turmeric
1 tbsp salt
1 tbsp honey
Dried Gursan bread
Instructions
Prepare the Vegetables:
Cut the eggplant, zucchini, potato, pumpkin, and carrots into large chunks.
Cook the Onions and Garlic:
Heat 4 tbsp of oil in a pot over medium-high heat on your
LG cooktop
.
Add the chopped onions and garlic paste, and cook until golden brown.
Add the Meat and Spices:
Add the lamb meat to the pot and cook for 5 minutes.
Add cumin, coriander, tomato paste, turmeric, Saudi spices, and mix well.
Add Ground Tomatoes:
Add the ground tomatoes and cook for 10 minutes, stirring occasionally.
Add Water and Cook the Meat:
Pour 2 liters of water into the pot, cover, and cook the meat for 35 minutes until tender.
Add Vegetables:
Add the red chili, dried lemon, green beans, and carrots to the pot, cooking for 5 minutes.
Add the eggplant, zucchini, potato, and pumpkin, and cook for an additional 10 minutes.
Prepare the Gursan Bread Layers:
In a deep serving bowl, layer small chunks of Gursan bread with sauce and vegetables. Repeat the layers until the dish is full.
Garnish:
Top with cooked meat and garnish with fried onions and freshly chopped coriander.
