Ingredients

For the Fish: 

  • 500 grams fish fillets (hamour, sea bass, or any firm white fish) 
  • 1 teaspoon salt 
  • 1 teaspoon black pepper 
  • 1 teaspoon cumin 
  • 1 teaspoon turmeric 
  • ½ teaspoon paprika 
  • 2 tablespoons lemon juice 
  • 2 tablespoons vegetable oil (for frying) 

For the Rice: 

  • 2 cups basmati rice (rinsed and soaked for 20 minutes) 
  • 1 large onion (thinly sliced) 
  • 2 cloves garlic (minced) 
  • 2 cups fish or chicken broth 
  • 1 teaspoon salt 
  • 1 teaspoon black pepper 
  • ½ teaspoon cumin 
  • ½ teaspoon turmeric 
  • 2 tablespoons butter or ghee 

For Garnish: 

  • Fried onions 
  • Toasted nuts (almonds or pine nuts) 
  • Fresh coriander 
Instructions
  1. Marinate the Fish: ○ In a bowl, combine salt, black pepper, cumin, turmeric, paprika, and lemon juice.
    • Rub the spice mixture onto the fish fillets.
    • Let the fish marinate for 15-20 minutes. 
  2. Fry the Fish:
    • Heat vegetable oil in a pan over medium-high heat on your electric cooktop.
    • Add the marinated fish fillets to the pan and cook until golden brown on both sides.
    • Once cooked, remove the fish from the pan and set aside. 
  3. Cook the Rice:
    • In the same pan, melt butter or ghee and sauté the sliced onions until golden brown.
    • Add garlic, salt, black pepper, cumin, and turmeric. Stir well.
    • Pour in the broth and bring it to a boil.
    • Add the soaked rice to the pan, cover, and simmer on low heat for 20 minutes.
    • Stir occasionally to ensure even cooking.
  4. Optional Oven Finish:
    • Preheat the LG Instaview oven to 180°C (350°F).
    • Place the fried fish fillets on a baking tray and bake for 5-10 minutes for extra crispiness.
    • Remove from the oven once crispy. 
  5. Serving:
    • Fluff the cooked rice with a fork and arrange it on a serving platter.
    • Place the crispy fish fillets on top of the rice.
    • Garnish with fried onions, toasted nuts, and fresh coriander.
    • Drizzle with lemon juice and serve.
