Saudi Kabsa
Ingredients
1.5 kg chicken (cut into pieces)
3 cups basmati rice
2 onions (finely chopped)
4 cloves garlic (minced)
3 tomatoes (chopped)
3 tablespoons vegetable oil
4 cups water or chicken broth
2 tablespoons kabsa spice mix
1 teaspoon turmeric
1 teaspoon black pepper
1 teaspoon salt (to taste)
2 cardamom pods (crushed)
1 cinnamon stick
3 cloves
1/2 cup raisins (optional)
Nuts for garnish (optional)
Instructions
Prepare the Chicken:
Heat the vegetable oil in a large pot over medium heat
on your
cooktop
.
Add the chopped onions and sauté until golden brown.
Add the minced garlic and sauté for another minute.
Add the Chicken:
Add the chicken pieces to the pot and stir to brown on all sides on a medium flame
on your
LG stove
.
Add the chopped tomatoes and mix well.
Add the Spices:
Add the kabsa spice mix, turmeric, black pepper, salt, crushed cardamom, cinnamon stick, and cloves.
Stir the mixture and cook for about 5 minutes to allow the flavors to blend.
Add Water:
Pour in the water or chicken broth and bring it to a boil.
Once boiling, cover the pot and reduce the heat to low. Simmer for 30-40 minutes until the chicken is fully cooked.
Prepare the Rice:
Rinse the basmati rice under cold water and soak it for 30 minutes.
After the chicken is cooked, remove it from the pot and set aside.
Add the soaked rice to the broth in the pot and stir gently.
Cover and cook on low heat
on your cooktop
for 20-25 minutes, until the rice is tender.
Serving:
Once the rice is cooked, you can garnish with raisins and nuts (optional).
Serve the Kabsa on a large plate with the chicken pieces placed on top of the rice.
