Saudi Kabsa

Ingredients
  • 1.5 kg chicken (cut into pieces) 
  • 3 cups basmati rice 
  • 2 onions (finely chopped) 
  • 4 cloves garlic (minced) 
  • 3 tomatoes (chopped) 
  • 3 tablespoons vegetable oil 
  • 4 cups water or chicken broth 
  • 2 tablespoons kabsa spice mix 
  • 1 teaspoon turmeric 
  • 1 teaspoon black pepper 
  • 1 teaspoon salt (to taste) 
  • 2 cardamom pods (crushed) 
  • 1 cinnamon stick 
  • 3 cloves 
  • 1/2 cup raisins (optional) 
  • Nuts for garnish (optional) 
Instructions
  • Prepare the Chicken:
    • Heat the vegetable oil in a large pot over medium heat on your cooktop.
    • Add the chopped onions and sauté until golden brown.
    • Add the minced garlic and sauté for another minute. 
  • Add the Chicken:
    • Add the chicken pieces to the pot and stir to brown on all sides on a medium flame on your LG stove.
    • Add the chopped tomatoes and mix well. 
  • Add the Spices:
    • Add the kabsa spice mix, turmeric, black pepper, salt, crushed cardamom, cinnamon stick, and cloves.
    • Stir the mixture and cook for about 5 minutes to allow the flavors to blend. 
  • Add Water:
    • Pour in the water or chicken broth and bring it to a boil.
    • Once boiling, cover the pot and reduce the heat to low. Simmer for 30-40 minutes until the chicken is fully cooked. 
  • Prepare the Rice:
    • Rinse the basmati rice under cold water and soak it for 30 minutes.
    • After the chicken is cooked, remove it from the pot and set aside.
    • Add the soaked rice to the broth in the pot and stir gently.
    • Cover and cook on low heat on your cooktop for 20-25 minutes, until the rice is tender. 
  • Serving:
    • Once the rice is cooked, you can garnish with raisins and nuts (optional).
    • Serve the Kabsa on a large plate with the chicken pieces placed on top of the rice.
